biaozhun is the mandarin word for “standard” or a criterium. For food and for kitchens it is essentiell and important to follow standardized norms and criterias. The height of the workbench of a kitchen and the amount of available light is an example for that. In cooking fish and seafodd it is much more important to follow biaozhun, because the health and well-being depends on high quality-standards.
